Braised Grilled Pomfret Fish

Grilled Pomfret Fish on BBQ cooking

Ingredients:

  • 1 Golden Pompano
  • ½  tbsp salt
  • ½  tbsp Chinese five-spice powder
  • 1 tbsp white wine
  • 1 tbsp cooking oil
  • 1 tbsp butter
  • 1 tbsp fresh garlic, sliced
  • 1 tbsp fresh ginger, sliced
  • 1 tbsp green onion, cut
  • 6 pickled chili pepper
  • 1 tbsp Sichuan peppercorn
  • 1 tbsp tomato, diced
  • 1 tbsp onion, diced
  • 1 tbsp ketchup
  • 1 tsp Oyster sauce
  • 1 tsp  soy sauce
  • 1 tsp brown sugar
  • 12 fl oz. beer
  • 1 tbsp potato, sliced
  • ½ tsp ground cumin
  • ½ tsp cumin seed
  • ½  cup fresh green and red chili bell, cut in a circle shape
  • ½  cup bean sprouts
  • Fresh Lemon juice, to taste
  • Black pepper, to taste

 

 

Directions:

  1. Make a few diamond pattern cuts on both sides of the fish.
  2. Rub salt, Chinese five-spice powder, and white wine on both sides. Then drizzle with cooking oil,  marinate for 1 hour.
  3. Place fish in a grill basket. Grill in with lid closed for 20 minutes. Turn over one time at about 10 mniute.
  4. Place a cast iron skillet on the grill rack, add butter garlic, ginger, and green onion, cook until fragrance, Then add pickled chili peppers,Sichuan peppercorn, tomato, onion, ketchup, oyster sauce, soy sauce, brown sugar, beer, potato, ground cumin, and cumin seeds, keep stirring while adding ingredients.
  5. Put in grilled pompano fish, cover the lid and cook for 10 minutes.
  6. Open the lid,  add green and red chili peppers, bean sprouts, green onion, lemon juice, and black pepper on top.
  7. Serve.
