Cauliflower Mashed Potatoes

Healthy, yummy dish to eat without any guilt

BAKED CAULIFLOWER 

 

Ingredients:

  • Cauliflower
  • Onion
  • Garlic
  • Olive Oil
  • Lemon
  • Paprika Powder
  • Thyme
  • Rosemary
  • Oregano
  • Salt and Pepper to taste

 

Directions:

  1. Preheat the oven to 400°F/200°C
  2. Cauliflower cut into small florets.
  3. Filled salted water in a large pot. Put cauliflower inside. Then drain and transfer to another large bowl. Set aside.
  4. Slice the onion and lemon. Mince the garlic and Paprika.
  5. Combine the onion, garlic and lemon with the cauliflower. Add the thyme, rosemary, Oregano and paprika powder. Pour olive oil. Seasoning with salt and pepper. Mix it well.
  6. Bake at 400°F/200°C for 30 minutes.

 

 

 

MASHED POTATOES 

 

Ingredients:

  • 200g Potatoes
  • 200ml Milk
  • 120g Parmesan Cheese
  • Olive Oil
  • Salt
  • Scallion
  • Nutmeg
  • Parsley

 

Directions:

  1. Peel and chop the potatoes.
  2. Cook the potatoes in a large pot of boiling salted water for 15 minutes, until tender but still firm. Drain.
  3. Mashed the potatoes in a bowl. Pour the milk in. Add salt and olive oil. Mix it well.
  4. Mince the scallion and Parsley. Combine with mashed potatoes.
  5. Put mashed potatoes on a plate. Add the baked cauliflower on the top.
  6. Garnish with Parmesan cheese and serve.
