Spicy Diced Chicken with Chilies is a typical Sichuan dish. Diners use chopsticks to pick out the pieces of chicken, leaving the chilies in the bowl and making it a fun dish to eat.

  • 1 lb. boneless skinless chicken thigh, diced
  • 1 cup red chili pepper
  • 2 tbsp minced garlic
  • tbsp onion
  • 1 pinch Thai basil
  • 1 tbsp cooking wine
  • 1 egg white
  • 1 tbsp corn starch
  • 1 tbsp olive oil
  • 1 tbsp hot chili oil
  • ½ tsp garlic salt

Prepare chicken meat as show in video. In a medium bowl combine chicken and all coating ingredients, mix well.

In a large skillet over high heat, bring enough oil to 300-350°F/150-180°C for deep frying. Put in chicken; stir constantly until golden.

In a large skillet over high heat, add olive oil, garlic and onion; stir until fragrant. Stir in red chili pepper, hot chili oil, chicken and garlic salt.
