Chocolate Mousse Cake

Elegant chocolate layer cake with mousse and glaze

— CHOCOLATE MOUSSE —

 

Ingredients:

  • 112 gram gelatine
  • 75 gram milk
  • 20 gram sugar
  • 150 gram melted chocolate
  • 270 gram whipped cream

 

Directions:

  1. In a bowl placed on top of a pan of simmering water(175°F), add milk, sugar, and gelatine. Mix well and heat it until 175°F.
  2. Add melted chocolate that’s cool down to 120°F. Mix thoroughly and set aside to cool down to room temperature.
  3. In a large bowl, add whip cream and melted chocolate mixture and stir well until thoroughly mixed.

 

 

 

— CAKE —

 

Ingredients:

  • 10 Egg
  • 300 gram sugar
  • 230 gram cake flour
  • 50 gram cocoa powder
  • 7 gram baking soda
  • 5 gram baking powder
  • 5 gram salt
  • 75 gram heavy cream
  • 100 gram butter, melted

 

Directions:

  1. In a large mixing bowl, add in egg and sugar. Turn the mixer on low speed, then add cake flour, cocoa powder, baking soda, baking powder, salt, heavy cream, melted butter and mix until batter is smooth.
  2. In a large flat baking pan, brush the pan with butter and cover the baking sheet on top of it. Pour the cake batter onto the baking pan. Bake at 350°F(180°C) for 15 minutes.
  3. Lay the cake on a flat cutting board and slice it to fit into the cake mold size. Place the slice cake in the bottom of the cake mold.
  4. Add the chocolate mousse on top of 1st layer cake in the cake mold. Repeat the step one more time. Freeze for 2 hours.
  5. For cake decoration(optional), pour melted chocolate onto the top of the patterned plastic sheet on a baking sheet. Slightly bend the plastic sheet into a cup to set. Wait for 5 minutes.

 

 

 

— CHOCOLATE GLAZE —

 

Ingredients:

  • 35 gram melted chocolate
  • 5 gram gelatine

 

Directions:

In a medium bowl, mix the melted chocolate with gelatine. Pour the glaze on the cake and freeze for 15 minutes.

 

 

 

— DECORATING —

 

Ingredients:

  • 30 gram cocoa powder
  • 2 strawberries

 

Directions:

Sprinkle and cocoa powder on top of the chocolate glaze at the top right corner of the cake. Use a paper to form the triangular shape. Repeat this step for the bottom left corner. pPop out the cake and put the chocolate decor and strawberries on the top to serve.
