  1. BUTTER COOKIE

Ingredients:

  • ⅛ cup (35g) sugar
  • ½ cup (105g) softened butter
  • 1 tbsp (10g) egg
  • ⅔ cup (100g) flour

Directions:

  • Beat the sugar and the butter into cream texture
  • Add the egg
  • Sift the flour and add to just incorporate
  • Roll out
  • Refrigerate 1 hour
  • Cut the star shapes (5 star sizes, 2 of each)
  • Bake 20 min at 356°F/180°C
  • Cool down

 

 

  1. BUILD ON

Ingredients:

  • gum paste
  • gold chocolate balls
  • hazelnut
  • golden flakes
  • white chocolate

Directions:

  • Roll out the gum paste
  • Cut the star shapes
  • Paste the gum paste shapes on the cookie shapes
  • Paste the gold chocolate balls on the peaks on the stars with white chocolate
  • Put the stars on top of each other to build the tree, paste with white chocolate in between
  • Put a hazelnut on top covered with white chocolate
  • Put golden flakes

 

 

  1. RED VELVET SPONGE CAKE

Ingredients:

  • 4 eggs
  • ⅔ cup (125g) sugar
  • 1 cup (125g) flour
  • ⅛ cup (15g) cocoa powder
  • 1 tbsp (15g) vanilla extract
  • red food colouring

Directions:

  • Preheat the oven at 410°F/210°C
  • Separate egg white from egg yolk
  • Whisk the egg yolks with the sugar in bain-marie
  • Add the vanilla extract and the red food colouring and whisk
  • Sift the flour and cocoa powder and add and blend with a spatula
  • Whisk the egg white to a firm texture and gently add it into the batter
  • Pour in cookie sheet pan covered with parchment paper
  • Bake 7-8 min
  • Turn the cake on a wet towel and roll it with the towel
  • Cool down

 

  1.  VANILLA CREAM (not filmed)

Ingredients:

  • 1 cup (240g) heavy cream
  • ¼ cup (25g)powdered sugar
  • 2 tbsp (30g) vanilla extract

Directions:

  • Whisk the cream into whipped cream
  • Add powdered sugar and vanilla extract and mix

Ingredients:

  • whipped cream
  • shredded coconut
  • raspberries
  • hazelnuts
  • white chocolate
  • gold chocolate balls
  • golden flakes

Directions:

  • Unroll the cake and roll it with the cream filling
  • Cover the outside with whipped cream
  • Roll the cake in coconut shreds to cover the full outside
  • Cut the edges
  • Decorate with raspberries, hazelnuts, white chocolate, gold chocolate balls and golden flakes
