Crispy Spicy Garlic Shrimp

Chips as outside crumbs, shrimp as filling and garlic as flavour.

Ingredients:

  • Shrimps 400g
  • Potato Chips 30g
  • Onion 60g
  • Garlic 60g
  • Ginger 50g
  • Scallion 30g
  • Dried Chili 10g
  • Corn starch 1.5tbs
  • Oil 450 ml
  • Salt and Pepper to taste

 

Directions:

  1. Crumble the potato chips. Transfer to a bowl.
  2. Mince the garlic and ginger. Slice the onion and scallion.
  3. Cut each shrimp along the back, deveined, tails intact. Stir in flour, seasoning with salt and pepper.
  4. Heat oil in a large skillet over medium-high heat. Add sliced onion, minced garlic and ginger. Fry until the paste be dried. Transfer to a bowl.
  5. In the same skillet, heat oil over high heat until it begins to smoke. Place the shrimp in and cook until red on all sides. Transfer to a bowl.
  6. Heat oil in another large pan, add sliced scallion and dried chili.
  7. Put the shrimp and the paste in. Sprinkle with salt and pepper.
  8. Spread the potato chips in the pan and fry it well.
  9. Garnish with scallion and serve.
