Crusted Whole Chicken

This whole chicken recipe makes the meat so juicy and tender

Ingredients:

  • 1 whole chicken
  • 1 cup Potato, peeled and diced
  • ½ cup Mushroom, sliced
  • ½ cup Carrot, diced
  • ½ cup Bacon, cooked
  • ½ cup Onion, diced
  • 2 tbsp Soy sauce
  • Salt
  • Black pepper
  • Chinese five spices powder
  • Red chili powder
  • Cumin powder
  • Thyme
  • One larger piece of banana leaf, cut into two equal sized piece

 

 

Directions:

  1. Light up charcoal to preheat the grill.
  2. Roll out a large dough on a cutting board to make an about 18 in.x 24 in. dough crust at about ¼ inch thick.
  3. In a mixing bowl, add potato, mushroom, carrot, bacon, onion and a pinch of each of the spices, salt, pepper, Chinese five spices powder, red chili powder, cumin powder, and soy sauce. Mix thoroughly.
  4. Rub the whole chicken with salt, pepper, Chinese five-spice powder, red chili powder, cumin powder and soy sauce inside and out. Stuff chicken with vegetable mixture.
  5. Wrap chicken with banana leaves twice, then wrap with parchment paper twice. Finally, wrap with the dough crust and make sure it is sealed perfectly. Place the wrapped chicken in a baking pan.
  6. Put chicken on the grill, rub top with oil. Close the lid cook for 4 hours.
  7. Take the chicken out, crack the crust and unwrap it.
  8. Serve hot.
