Fruits Spongecake

Soft cake layered with cream and topped with fresh fruits

Ingredients:

 

— Cake —

  • Egg yolk mixture
  • 285g egg yolk
  • 175g milk
  • 165g vegetable oil
  • 290g cake flour
  • 10g baking powder
  • 5g salt
  • Egg white mixture
  • 570g egg white
  • 290g sugar
  • 8g tartar powder

 

— Cream Filling —

  • 940g heavy cream
  • 140g powdered sugar

 

— Garnish —

  • 1 green apple
  • 12 strawberries
  • 2 peaches
  • 12 grapes
  • 2 kiwi

 

 

 

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Egg yolk mixture: in a large bowl, whisk egg yolk, milk, vegetable oil until evenly combined. Then add cake flour and baking powder, salt, and whisk to make sure there are no lumps.
  3. Egg white mixture: in another large bowl, add the egg whites, sugar, and tartar powder, and beat until you see hard peaks when lifting the mixer up.
  4. Take about ¼ of the egg whites and fold them into the egg yolk mixture, then repeat with the remaining egg whites until the batter is evenly combined.
  5. Transfer batter to the prepared baking pan and smooth the top with an offset spatula.
  6. Bake 375°F(190°C) for 45 mins until light golden brown. Let cool completely.
  7. Make the cream filling: in the bowl of a stand mixer, beat heavy cream and sugar at medium speed until pale and fluffy.
  8. Slice the cake horizontally into 3 parts. Spread cream filling evenly on each cake layer and over the cake surface.
  9. Garnish the cake with slices of green apples, strawberries, peaches, kiwi, grapes, or fruit of your choice.
  10. Enjoy!
