- 500g/4 cups Flour
- ¾ cup Water – add a little more if dough is too dry, add flour if too sticky
- Olive oil
- Soy sauce
- Oyster sauce
- Choy sum
Knead the dough. Add flour onto a large kneading board. Knead by hand until dough forms and the surface of the dough becomes smooth. Cover the dough with plastic wrap. Let the dough sit for 30 minutes. Dust the working surface with flour and transfer the dough onto the kneading board. Knead a few more times and let it sit 2 more hours. Dust the working surface again. Roll it out on a floured board. Keep working and rolling the dough, adding flour in between, until it is no longer sticky. Continuously fold until multi-layered. Slice along the side with a sharp knife to make noodles.
Add water to a pan. Bring it to the boil. Add noodles, once cooked transfer to a bowl with cold water.
Add olive oil to a skillet. Add beef, cook until to brown, then add the following. Scallion, onion, soy sauce, oyster sauce, noodles, choy sum, salt and pepper. Stir well.
Serve immediately and enjoy!
