Smoked salmon

Smoked salmon with a fresh garnished salad

Ingredients:

  • 2kg salmon
  • ¾ cup sea salt
  • ½ cup brown sugar
  • 2 tbs pepper
  • 1 ½ cup rice
  • ½ cup brown sugar
  • Thyme
  • Sage
  • Orange peels
  • 1 avocado
  • 1 mango
  • Cherry tomato
  • Arugula
  • 1 Lemon
  • Salt and pepper to taste
  • Olive oil
  • Mozzarella cheese
  • Pine nuts

 

Directions:

  1. Marinate salmon with sea salt, brown sugar and pepper for over night.
  2. Wash off the mixture of the salmon. Cut salmon into 3 portions.
  3. Put a tin foil under a wok. Add rice, brown sugar, thyme, sage and orange peel onto the tin foil. Place the salmon on top of the mixture. Smoke for 30 minutes.
  4. To make salad: Mix chopped avocado, mango, cherry tomato, Arugula and lemon juice, pine nuts together. Seasoning with Salt, pepper, Olive oil, Mozzarella cheese.
  5. Place the smoked salmon on top of the salad.
  6. Serve and enjoy.
