Turkey Leftover 2 Ways

Give your leftovers a new life and make these savoury dishes!

— WAY 1: TURKEY HASH —

 

Ingredients:

  • Tiny Potatoes
  • Leftover Chicken
  • 3 cloves Garlic, minced
  • 1/2 Onion, diced
  • 1/2 bunch Green Onions, sliced
  • 1 1/4 tsp Garlic powder
  • 1 1/4 tsp Onion powder
  • 1/2 tsp Crushed Red Pepper
  • 1 tbsp White wine
  • Cheese
  • Sour cream
  • Scallion
  • Salt and pepper to taste

 

Directions:

  1. In a medium pot add diced potatoes, cover with cold water and boil for 5
    minutes, until potatoes are tender which pricked with a fork.
  2. Drain and set aside. In a medium skillet add olive oil and heat over medium
    heat. Add onion and stir. Add garlic and cook about 2 minutes.
  3. Add potatoes into pan, season with spices, mix well and cook for about 5
    minutes more. Add turkey, mix well, and cook for 5 minutes. Transfer to an oven.
    Bake at 400 o F until it turns to golden brown (about 5-6 minutes).
  4. In a small bowl with sour cream, garnish minced scallion as dressing.
  5. Enjoy!

 

 

 

— WAY 2: STUFFED PEPPERS —

 

Ingredients:

  • 3 Large Eggs, beaten
  • Leftover chicken
  • Leftover stuffing (Green Beans with Bacon)
  • 5 Red and Yellow Bell Peppers, hollowed out
  • Cheese, shred
  • Salt and pepper to taste

 

Directions:

  1. Preheat the oven to 380 o F. In a large bowl, whisk beaten eggs, chicken and
    stuffing. Season with salt and pepper, mixture well.
  2. Spoon mixture into bell peppers and sprinkle the shred cheese.
  3. Transfer peppers to baking dish and bake until peppers are tender and cheese
    is melt, 25 to 30 minutes.
  4. Enjoy!
