Zucchini 2 Ways

Zucchini as shell, garnish or pancake? One vegetable, so many different ways to cook it!

 WAY 1 

 

Ingredients:

  • 3 Zucchini
  • Shiitake
  • ½ cup onion
  • Garlic
  • Salt and pepper to taste
  • Cream cheese
  • Cheese

 

Directions:

  1. Cut zucchinis lengthwise and scoop the pulp out with a spoon.
  2. Combine the chopped the zucchinis pulp chopped shiitake, cream cheese, onion and garlic. Season with salt and pepper. Mix well and spread the filling evenly into the zucchinis skin. Top with cheese and bake at 400℉ for 20-25 minutes.
  3. Serve and enjoy.

Ingredients:

  • Zucchini
  • Parsley
  • Dill
  • Cheese
  • Salt and pepper to taste
  • Egg
  • Paprika
  • Flour
  • Olive oil

 

Directions:

  1. Grate the zucchini. Mix it with parsley ,dill, cheese. Season with salt and pepper. Add eggs, paprika, flour. Mix well.
  2. Add olive oil in a skillet. Scoop the mixture onto the skillet. Fry until golden brown.
  3. Serve with yogurt.
